Rest Day Recipe

Blackened Tilapia Baja Tacos

Yield: 4 servings

1/4 cup reduced fat sour cream (or plain greek yogurt)
2 Tbsp chopped fresh cilantro
2 Tbsp fresh lime juice
1 jalapeno, seeded and chopped
1 1/2 tsp paprika
1 1/2 tsp brown sugar
1 tsp oregano
3/4 tsp garlic powder
1/2 tsp salt
1/2 tsp cumin
1/4 tsp ground red pepper
4 (6oz) tilapia filets
1 Tbsp olive oil
8 flour tortillas
1/2 avocado, thinly sliced
1/4 cup shredded monetary jack cheese

  1. Combine first 4 ingredients in food processor; process until smooth
  2. Combine paprika and next 6 ingredients; sprinkle evenly over fish. Heat oil in skillet over medium heat. Add fish to pan; cook 3 mins on each side
  3. Warm tortillas. Divide fish, sour cream mixture, avocado and cheese evenly among tortillas.
